Food business operators are required to ensure that their premise is designed and constructed to minimise opportunities for food contamination.

Standard 3.2.3 of the Australia New Zealand Food Standards Code sets out requirements for the design and construction of food premises, fixtures, fittings, equipment and food transport vehicles. Some exemptions apply to temporary food businesses and businesses operating from a private home.
